This was delicious! Probably the best tofu scramble to come from the Pandemic Summer Fun Camp all summer long. I am working on an article about bell peppers and nutritional yeast but I haven't finished it yet, I will. In the mean time I recommend everyone make this for breakfast, it is amazing.

In this second attempt at the American Safari Cooking show, Kat Elizabeth makes her favorite version of Yerba Maté. Yerba Maté is a species of the Holly family in the form of a small tree or large shrub growing up to 15 meters with evergreen leaves, little white flowers, and small red berry fruits. Yerba Maté is native to subtropical South America, more specifically Argentina, southern Chile, eastern Paraguay, western Uruguay and southern Brazil. Yerba Maté is gaining popularity in America as a tea alternative to coffee and other stimulates. Maté contains xanthines, which are alkaloids in the same family as caffeine, theophylline, and theobromine, well-known stimulants also found in coffee and chocolate. Maté also contains elements such as potassium, magnesium and manganese. Caffeine content varies between 0.3% and 1.7% of dry weight (compare this to 2.5–4.5% for tea leaves, and 1.5% for ground coffee). Some users report a mental state of wakefulness, focus and alertness reminiscent of most stimulants, but often remark on maté's unique lack of the negative effects typically created by other such compounds, such as anxiety, "jitteriness", and heart palpitations. There are two main types of Cardamom, green cardamom or just cardamom, and a black or brown cardamom which refers to the same thing. Cardamom has a strong, unique taste, with an intensely aromatic fragrance. Cardamom is used as flavorings in both food and drink, as cooking spices and as a medicine. I use the words chopped and diced roughly. Really though, just cut the veggies into what ever shape you want to eat them in. Mess around with it. Also, I didn't measure anything, sorry. Well, not really. I encourage cooking by experimentation. Trial and error while developing a feel for it over time. Play and test and tweak. Have Fun!
